Diples - Greek Honey Rolls Recipe

Christmas on a platter, drizzled with honey syrup and topped with chopped walnuts! Diples get their name from the Greek word for “fold” and are a traditional Greek honey pastry dessert that is very popular around Christmas time throughout Greece. They may be rather challenging to make, but you have to give them a go!

Ingredients 
  • 2 flat tbsps sugar
  • 2 flat tbsps baking soda
  • 350–400g all-purpose flour
  • 5 eggs (divided into yolks and whites)
  • juice of 1 lemon
  • juice of 1 orange
  • 1 tbsp white wine vinegar
  • 1/2 cup corn oil
  • a pinch of salt
  • vegetable oil for frying                   
For the syrup
  •  1/4 of a cup sugar
  • 1/4 of a cup water
  • 1/2 cup honey
  • juice of 1/2 lemon
  • 1 cinnamon stick
  • 150g chopped walnuts, for garnish 
Cooking Instructions

1. 
Place the egg whites into the bowl of the electric mixer, along with a pinch of salt. Whisk the egg whites until the mixture is very thick and glossy.
2. Add the egg yolks one at a time, whilst mixing. In a cup add the orange and lemon juice and baking soda and blend, until dissolved, and pour in the egg mixture. Add the white wine vinegar and the sugar and mix.
3. Pour the mixture in a large bowl or basin and sift in the flour; add the oil and knead the dough using your hands, until smooth and elastic.
4. Separate the dough into four pieces, cover with some plastic wrap and let it rest for 30 minutes.
5. Using a rolling pin, roll out each part of the dough into thin rectangle sheets.
6. Using a rolling cutter, cut the rolled-out dough into rectangular pieces or square pieces. Heat the oil in a large frying pan, and deep fry the diples in batches of 3-4 at a time, pushing them down with a fork and flipping their sides until colored. 
7. Prepare the syrup for the diples. Pour in a pot all the syrup ingredients and bring to a boil; boil for 5 minutes, until the sugar has dissolved.
8. Place the diples on a serving platter and drizzle with the syrup (or if you like them extra syrupy, soak each one in the syrup for a few seconds). Sprinkle with ground walnuts and cinnamon.

My Week in Athens… Dec 13

I suppose most of us already know this – but Athens is a good time. Even in winter...

I convinced a friend to visit over the past few days – with promises of warm weather & sunshine to cure her more ‘northern’ lifestyle. Of course, it’s been freezing and wet and generally unpleasant here too most of the week – but that didn’t stop us.

With nightly escapades in Gazi, Thissio, Psirri and Kolonaki, the nightlife tour of Athens was on! Needless to say, she was appropriately dazzled.

From drinks at Hoxton in Gazi, coffee at my fave Moma in Thissio to a great dinner at Papadakis in Kolonaki and a night of live music and nargile in Psirri – we managed to move from shabby-chic warehouse to comfy-chic café to elegant-chic fine dining to graffiti-chic in Psirri. All in the span of a few (ok, more than a few) blocks’ walk.

And at each point, on each evening, I was thinking ‘this is winter, it’s raining, it’s cold, it’s not an easy place to be these days’ – but still I have the distinct feeling that people manage to enjoy themselves in that quintessential Athenian way: after dark, anywhere, with friends.

Bring on winter. And hopefully bring on a quieter week in front of the fireplace ;)

Despite the problems caused by the recent default of Russian tour operators, the association of tourist businesses (SETE) has estimated that 19 million tourists will visit Greece in 2014.

SETE’s estimations are strengthened by the data regarding international arrivals in the past seven months, which show that all major airports have seen double-digit increases.

The greatest increases in tourist arrivals are documented at the airports of Athens (31%), Chania (22.9%), Myconos (39.9%), Santorini (26.7%) and Kalamata (62.5%). The airport of Iraklio may have shown a paltry 2.7% increase, however it has reached its maximum capacity, with (delayed) construction of a new airport in Kasteli expected to have a significant effect.

Beef Stew With Petimezi

Petimezi is one of those very rustic traditional Greek ingredients that have had a comeback the last couple of years, as people began το appreciate its nutritional as well as  its gastronomic value. It is a naturally sweet syrup that looks very much like molasses and is made by boiling down grape juice or must. I can’t really  fantastic ingredient to work with and once you track it down (try Greek stores or health stores), there are endless things you can do with it.

It can substitute honey almost in every recipe, so use it to make a dressing, drizzle over pancakew or yogurt, use it in baking (it is great with carrot cake and with anything that has pumpkin in it), as a glaze for turkey, pork etc.

Traditionally petimezi was used as a spread on bread especially for children, as it is very high in antioxidants and minerals. You can also make cookies with it called moustokouloura, when grape must (moustos) isn’t available any more.

I recently made this beef stew using petimezi and red wine vinegar and was amazed by the depth of flavours. The vinegar you use is very important so find a good one, but do not use balsamic.The vinegar counteracts the sweetness of the petimezi and the resulting effect is sweet and sour, but not as strong as a Chinese version for example.

Note: you can make your own petimezi if you boil down the juice you get from lets say 2 kg of white grapes, until it is dark and viscous, but I have never done it myself.

INGREDIENTS for 6 people

for the marinade

1 cup white wine
1/4 cup (60ml) olive oil
2 stalks celery, chopped
1 carrot, chopped
1 clove garlic, chopped

for the stew

1.5 kg stewing beef cut into chunks
1/3 cup (80ml) petimezi
1/4 cup (60ml) red wine vinegar
1 onion, chopped
2 carrots, finely sliced
2-3 berries all spice
the marinade

DIRECTIONS

Mix all marinade ingredients in a plastic container with a lid and add the beef chunks. Marinate for 24 hours, turning once or twice.
Drain beef from marinade and pat dry with kitchen paper. Keep the marinade and vegetables separately to use in the stew.
In a large pot heat 3-4 tbsp of olive oil and  brown the beef pieces from all sides. Remove from pot and saute the onions until they start to colour. Add the marinade vegetables together with the sliced carrots and cook for 2-3 minutes. Pour in the petimezi, vinegar, allspice, and 1/3 of the marinade. Wait until the alcohol has slightly evaporated (about 1-2minutes), give it a good stir and turn down the heat. Cover the pot and let the meat simmer until it is meltingly tender, about 2-2.5 hours. Every now and then check whether it needs more liquids and add some of the marinade. I actually ended up using all of it.
By the end of the cooking time you mush have a nice thicki-ish sauce (petimezi is also a thickening agent). Season well with salt and pepper and serve with mashed potatoes, roast potatoes, pasta or rice. This dish can very successfully be frozen or eaten the next day.

Athens Best-Of Restaurants

I’m sitting on a plane as I type this into my phone (pic included!) – proving to myself once and for all that geography is well and truly irrelevant. Even more so since I am learning about all that Athens has to offer, from 10,000 metres in the sky!

I’m reading ‘2Board’, the quarterly magazine of the Athens Airport. I’ve always liked this magazine – it’s slick, well produced and has a great mix of information about cool and interesting happenings in Athens, Greece and across Europe.

This issue has a special feature called ‘The Athens Food Lovers Guide’, their first annual Best-of list, dedicated to ‘celebrating the city’s most appetizing arrivals and standings of the past year’. That was enough to hook me for a front-to-back read.

Where to begin! Here are a few interesting selections – most of them have websites or at least Facebook pages to check out some photos and menus:

Destination Greece For Greek Wines In Canada

For over a decade Steve Kriaris, and his company Kolonaki Group, has been promoting the modern wines of Greece in Canada in the most innovative of ways.

Much of Steve’s emphasis has been the lobbying and educating of Canada’s Liquor Control Boards, which control the sale of wines and spirits in teh country (or LCBs) and most notably the LCBO, in his home province of Ontario. Largely as a result of Steve’s efforts, the LCBO has selected Greece as the flagship country in its new “Products of the World” campaign at the LCBO shop located at 200 Danforth Avenue.

The massive exposure that Greek wines will receive is critical for a country and an industry that is reeling from years of recession and financial crisis and the fact that its happening in one of the biggest cities in North America is a huge push for Greek wineries.

Consumers will now be able to find over 90 wines and spirits from all over Greece, creating the largest selection of Greek wines available in one store outside of Greece.

Scenic And Smoke-Free Cafes In Athens

For those of us that live in Athens, we know that going out with friends and meeting to chat over a coffee is part of a very typical way of life in Greece. While it's a lovely aspect of Athenian culture, if you are a non-smoker and want to sit inside during the cooler months, you may find it challenging to find a smoke free venue.

For those who aren’t familiar with smoking habits in this part of the world, smoking is still a widely accepted habit. It is very common to see customers lighting up freely at an indoor cafe, restaurant or tavern. However, if you like to enjoy your coffee smoke-free then Marissa Tejada of Travel Greece Travel Europe gives us some great options as she explores and shares with us her list of scenic and smoke free indoor cafes in Athens.

Step into a story book at this beautiful indoor café. The new venue is decorated to the nines for Christmas. You can sit under a huge Christmas tree and sip your tea!  Everything inside Little Kook follows a story book theme. The waitresses and waiters even dress the part of various fairytale characters. The menu is a scroll! There's an ample selection of gourmet hot chocolates, coffees, teas and sweets such as cakes and crepes. Be sure to check out the second floor too - the cafe's decor will have your eyes wandering!

Petit Fleur is simply charming. The décor is cozy, warm and bright. The one I frequent, when I can, is in Kolonaki. I say that because there aren’t many indoor tables at the Kolonaki venue, our outdoor seating for that matter, so many times I’ve had to move on. There are several other locations throughout Athens including Halandri, Kifisia and Pangrati. The large, thick and delicious hot chocolates are definitely worth trying. The carrot cake is super.

This tiny café specializes in, well, chocolate! I seriously had the best cup of hot chocolate here recently. I tried the Madagascar blend.  If you prefer your coffee, there is a selection of coffee as well. The Dark Side also sells handmade truffles and beautifully boxed chocolates. There are just a few tables inside that look out onto a view of Solonos Street.  The interior is plain, simple, relaxing and quiet.

Located in the heart of the National Gardens next to the stately neoclassical Zappeio landmark, you’ll find Aegli Cafe. There are dozens of tables both inside and outside. I think it’s really much nicer to sit outside in the open café space where you can have a view of the park or Mt. Lycabettus hill. There are also some outdoor heated spaces. However, if the weather is too cold for you, the inside space is wonderfully smoke free! There’s a large menu of snacks, sweets and all the typical coffees and teas you desire. Take a walk around the beautiful park afterwards. The outdoor cinema is a favorite in the summer months.

A group of people from Athens started the Freeday initiative, a group who meets every Friday night around Thissio for a long cycling session. Freeday was started about 8 years ago and what started out as a small weekend ride for cycling enthusiasts, the group has now grown to over 2,700 members! 

The ride normally starts from Thissio - Monastiraki at 21:50 and ends around 3:30 in the morning in the same area. The ride can last from 4 to 6 hours, cycling 30km to 50km, and the route is different every week! The course to be taken is not announced but its destination is posted on Facebook the day before, in the form of a puzzle. The mystery is discussed by riders along the way, bets are placed and guesses are made as part of the fun involved.

Admittedly, Athens does not possess ideal infrastructure for cycling, while, making things worse, local car drivers are not accustomed to the idea. Amid such unfavorable conditions, the power of plenty is the only solution. The ritual has been maintained over the years.

“The experience serves as a good school for learning how to get around Athens on a bicycle. You are taken into consideration by car drivers when part of a large group. Over the years, of course, progress is being achieved and group rides are nowadays organized virtually on a daily basis by groups and municipalities. It’s also a trend, a solution for tight finances, as well as a form of exercise,” noted Antonis, a regular participant of the Thissio rides every Friday night. “Cyclists and car drivers can co-exist with a bit of overall cooperation, even if cycling lanes are not available in Athens,” he added.

Fascinatingly, every Friday night, Freeday draws together individuals who are engaged in very different lines of work during the day. The ritual has established close friendships. Asked whether he could share any unique stories from the weekly rides, Spiros, one of the group’s most avid members who helps design the routes, responded: “The difficult rides during winter, when it is raining, are unique as Freeday is staged every Friday, regardless of the conditions – except for certain national holidays. We get the biggest turnout at the end of July when we organize the Tour d‘ Athenes, which covers roughly 140 kilometers and lasts all night. But you get to see a magical sunrise at the end of it. The rides to Sounio and Penteli, to its observatory, rank among the most beautiful experiences.” Asked whether the group cycling experience has changed his life, Spiros exclaimed: “It rejuvenated me,” adding that “I also met this guy,” offering a fellow rider to his side an embrace.
